Hey folks, time for another great recipe from the masterminds of your favorite chefs at ETSU, us – Chefs Haj-Hussein and Myers.
This is a great appetizer for a pasta dish we will feature in the next East Tennessean publication. This is a spinach artichoke dip and is better than “Chetters” if you get what we’re saying.
Don’t waste your precious time and money on the pre-made dip from the frozen section of the local grocery store. Make this “easiest cheesiest awe-inspiring artichoke dip” for your friends and co-workers and they will be forever grateful for this tasty treat.
What you will need:
1 8-oz. pkg. softened cream cheese
1 12-oz. pkg. thawed & drained frozen spinach
1 small jar drained and chopped artichoke hearts
1/2 cup shredded mozzarella
1/2 cup grated parmesan cheese
What to do:
Pre-heat oven to 350 degrees. Mix all ingredients until well-blended. Coat baking dish with non-stick spray and scoop mixture into the dish.
Bake for 20 minutes and remove from oven. Let set for 10 minutes to cool and serve with your favorite bread, crackers, or chips! Do not forget to turn off your oven!
Additional tips: If you have garlic powder on-hand add 1/2 tsp. for a little extra flavor, and some chopped onions while you are at it. Or if you like a little spice, add chopped roasted red peppers or a dash of cayenne pepper to the mix for that extra kick.
If you are on a diet use fat-free or 1/3 fat cream cheese as well as skim-milk mozzarella. If you really like cheese, like we do, don’t worry if a little extra mozzarella or parmesan “falls” in there.
Just remember, this dip is great with the main-dish which will be featured in the next article.
A nice drink that will compliment the meal as a whole is this “cran-ginger surprise!” Pour a splash of your favorite cranberry or cranberry juice mixture into the bottom of a clear glass. Top it off with lemon-lime soda or ginger-ale for a beautifully layered drink.
