Fall is upon us. Here’s a healthy recipe for some delicious banana cinnamon muffins that pack a lot of great taste with a lot less calories than most namebrand muffins.
Ingredients:
1 cup whole wheat flour
1 Tbsp baking powder
1/2 tsp baking soda
1/8 tsp salt
2 mashed bananas
1/4 sugar = 200 cal
1 tbsp of cinnamon
3 tbsp of egg beaters
1/2 tsp vanilla extract
1 cup of skim milk
Makes 12 muffins
77 calories per muffin
Pre-heat oven to 350 F. Grease muffin pan with butter spray.
Mix flour, baking powder, baking soda and salt in one bowl.
Mix mashed bananas, sugar, cinnamon, egg beaters, vanilla extract and skim milk in another bowl.
Slowly add dry mixture to wet mixture as you mix it with a handheld mixer.
Once mixed together, pour into a 12-serving muffin pan and bake for 15-20 minutes.
For a bit of extra flavor, once muffins are in the pan, top each one with a couple of sprinkles of a cinnamon/sugar mixture.
