Welcome to the column to go to when you’re a broke, tired college student in a dorm. Today, I wanted to point out a resource that some of you may need and shouldn’t be ashamed to use: Bucky’s Food Pantry. According to them, one in three students at ETSU are food insecure in some way. As a result, I wanted to make an article with things that they could give to students who need it. According to my short call with them, they are open from 8 a.m. to 2 p.m. Monday through Friday. This is a list of some of the food they may be able to offer at any given point: Canned veggies, canned meat, canned fruit, beans, peanut butter, jelly, coffee, mac and cheese, bread, pasta and rice.
This is obviously not an exhaustive list, but it gives an idea of how you can elevate what you’re given. For today’s recipe you’ll need: One cup dried rice, one tablespoon oil, two servings of broth base, one chopped onion, canned chicken, canned corn, canned peppers, canned mushrooms, canned pineapple and soy sauce.
First, you’ll need to cook your rice. If you have access to a rice cooker, use one to one and a half ratio of rice to water or broth, and follow the instructions you normally use. If cooking on the stove, use a ratio of one part rice to two parts water or broth. Broth base is optional here but will help give you more flavor.
While your rice is cooking, heat up a pan on medium heat, and start to oil your pan. Stir fry your onion until translucent, and then add your canned chicken, corn, peppers, mushrooms, pineapple and soy sauce to taste.
Once the rice is done, you can mix it all together and have a cheap meal.
