Need a dish to take to a post-St. Patrick’s Day party or family Easter dinner? The dessert featured in this article can be made for either holiday or as an all-around light spring treat!
The recipe can be altered many ways choosing from a number of different flavors. Flavors we suggest are pistachio and lemon because of their beautiful pastel colors.?We also recommend?basic vanilla or chocolate and dress it with fresh fruit, however, your personal favorite flavor of pudding will work just as well!
This is what you will need for Magnificent, Money-Saving Mousse:
Two 3 oz. packages of Jell-o instant pudding
3 cups of milk
1 pint of whipping cream
2 tbsp. of confectioners sugar
1 tsp. of vanilla extract
In one bowl whisk instant pudding and milk together until it has thickened. In a separate bowl (which has been chilled for two hours if possible) beat remaining ingredients together until texture of whipped cream.
If you don’t have an electric mixer your arm and whisk will work just fine but may take quite a bit longer to achieve the desired texture (and just to warn you, your forearm will be sore the following day).
The next step is to fold the contents of both bowls together, and by fold, we do not mean stir. Folding is a gentle process which allows the texture to remain fluffy and the two colors of the mixtures should not be completely combined. To fold, incorporate ingredients by gently moving them from the bottom up over the top in a circular motion.
Place into small dishes, chill, and enjoy! This recipe makes eight 6 oz. servings and should cost less than ten dollars!
Additional tips:
For any dietary needs you can substitute regular pudding with sugar-free and also confectioners sugar can be substituted with Splenda.
If you have a couple of extra dollars you can top with fresh fruit, nuts, or chocolate.
