Three nutrition and dietetic students from ETSU recently participated in the professional poster presentation session at the Tennessee State Dietetic Association annual meeting in Nashville.
Holly Gilliam, a senior from Athens, won first prize with her project.
She built an imagined tapas and wine bar, Bistro 71, to be located in Seattle.
Gilliam planned the layout of the restaurant, wrote a prospectus and marketing plan, displayed the colors and textures she would use in the interior.
She also outlined the signature food and drinks her creation would feature.
Ashley Thomas, also a senior from Athens, designed a plan for a restaurant she called The Copper Kettle. The restaurant she created would serve fondue in Savannah, Ga.
She outlined the layout, color scheme, and even a logo for the business.
Sara Bagheri of Tehran, Iran, presented a poster of her research, “The Effect of Glucosamine Supplementation on Type 2 Diabetic Patients.”
She earned a bachelor’s and a master’s degree in her native country and is now taking classes at ETSU with plans to join the registered dietitian program.
